The Dumplings
What's the difference between pelmeni, vareniki, gyoza, khinkali, manti, spring rolls and pasta?
Pelmeni — small, raw filling, boiled. Vareniki — larger, pre-cooked fillings, great for veg & sweet. Gyoza — Japanese, crispy bottom, steamed top. Khinkali — Georgian, hand-pleated with spiced meat & broth. Manti — steamed, meat. Spring rolls — rice pancakes with veg + shrimp/chicken/salmon. Pasta — handmade, cooks in two minutes.
What do 'Organic' vs 'Standard' and 'Art' vs 'Classical' mean?
Options on many items. Organic uses organic-sourced ingredients (vs Standard); Art is a special artisan / decorative version (vs the Classical everyday version). Upgrades cost a little more; the product page shows the exact price for each choice.
What ingredients do you use? Any allergens?
Real, natural fillings and homemade dough — no preservatives or fillers. Common ingredients include wheat (gluten), egg, dairy/cheese, fish, shellfish and meats. Tell us about allergies when you order — many items are made to order.
Cooking & Storage
How do dumplings arrive, and how should I store them?
They arrive frozen. Keep them in the freezer until you cook — don't thaw first. Cook straight from frozen for the best texture.
How do I cook each type?
Pelmeni / vareniki — drop frozen into boiling salted water; done a few minutes after they float. Gyoza — pan-fry the bottom, add a splash of water, cover to steam. Khinkali / manti — steam (manti longer). Spring rolls — heat through. Pasta — boil ~2 minutes.
